3 small Green Chilli

1 tsp Turmeric Powder
1 tbsp Red Chilli Powder
250 g Carrot (chopped)
1 inch Ginger (julienned)
2 tbsp Mustard Seeds
1 tbsp Fennel Seeds
1 pinch Asafoetida Powder (Hing)
4 tbsp Mustard Oil
2 tbsp Lemon Juice
1 pinch Sugar

Prepare the Vegetables Thoroughly wash and peel the carrots. Pat them completely dry with a kitchen towel to ensure the pickle stays fresh longer. Cut the carrots into even 2-inch matchsticks. Slit the green chilies lengthwise and julienne the ginger.

Prepare the Spice Blend In a small blender or mortar and pestle, coarsely grind the mustard seeds and fennel seeds. You want a gritty texture rather than a fine powder to provide a traditional "achar" feel.

Heat the Oil In a small pan, heat the mustard oil until it reaches its smoking point. This removes the raw, pungent aroma of the oil. Once it begins to smoke, turn off the heat and let it cool for about 1 to 2 minutes so it is hot but not scorching.

Bloom the Spices While the oil is still warm, add the asafoetida (hing). Then, stir in the ground mustard and fennel seeds, turmeric powder, and red chili powder. The residual heat will toast the spices and release their essential oils without burning them.

Mix Everything Together Place the carrot sticks, green chilies, and ginger into a large glass mixing bowl. Pour the spiced oil over the vegetables. Add the salt, lemon juice (or vinegar), and a pinch of sugar.
