Whip up a tasty snack in no time with these Instant Sooji Gulgule! Made using semolina (sooji), fresh curd, and a simple tempering of mustard seeds, curry leaves, green chilies, and aromatic spices, these soft and fluffy bites are packed with flavor. Steamed until perfectly cooked and lightly stir-fried for a delicious finish, they make a healthy, oil-light alternative to deep-fried snacks. Perfect for breakfast, evening tea, lunchboxes, or unexpected guests.

For Dough:
1 tbsp Clarified Butter (Ghee)
1 tsp Mustard Seeds
1 cup Water
1 tsp Sugar
to taste Salt
1 tsp Turmeric Powder
1 cup Semolina(Rava)
2 tbsp Curd
as needed Water
For Boiling:

1 tsp Clarified Butter (Ghee)
For Tempering:
1 tbsp Clarified Butter (Ghee)
1 tsp Urad Dal (for tempering)
1 tsp Bengal Gram (Chana Dal)
1 tsp Cumin Seeds
1 tsp Mustard Seeds
1 piece Ginger (chopped)
2 small Curry Leaves
2 piece Dry Red Chilli
1 piece Green Chilli (chopped)
1 tbsp Peanuts
pinch Turmeric Powder
to taste Salt
1 tsp Sugar
small Coriander Leaves (chopped)
small Mint Leaves
1 tsp Lemon Juice
Step 1— Prepare the Sooji Dough

Heat ghee in a kadai and add mustard seeds, letting them splutter.

Add water (or coconut milk), sugar, salt, and turmeric powder. Mix well.

Stir in the semolina and cook until it forms a soft, cohesive dough.

Add a little extra water and beaten curd, mixing until the liquid is fully absorbed.

Transfer to a bowl or parat and knead thoroughly while warm to develop the texture.

Pinch off lemon-sized portions, flatten them slightly, and press the center to create a shape.
Step 2— Boil the Gulgule

In a large kadai, bring water to a boil with sugar, salt, and ghee.

Drop the shaped gulgule into the water and let them simmer for 2 to 3 minutes.

Once cooked, remove them and transfer to a plate or tray.

Place them in the refrigerator for 2 to 3 minutes to help them firm up and hold their shape.
Step 3— Temper (Tadka) and Serve

Heat ghee in a wok and sauté the gota urad dal and chana dal until light golden.

Stir in the ginger, curry leaves, dry red chillies, green chillies, and peanuts. Toss well.

Add a pinch of turmeric powder, the prepared gulgule, a sprinkle of water, salt, and sugar.

Toss gently to combine. Finish by adding coriander leaves, mint leaves, and a squeeze of lemon juice.

Garnish with fresh coconut bits and serve hot.
