Made using a nutritious blend of sorghum (jowar), rice, and gram flour, these crispy homemade wafers are perfectly spiced and fried until golden. Topped with boiled potatoes, tangy chutneys, yogurt, and crunchy sev, this snack offers the perfect balance of sweet, spicy, and savory flavors. For the Gluten-Free Papdi:
1 cup Sorghum Flour (Jowar)
3 tbsp Rice Flour
3 tbsp Gram Flour (besan)
1 tsp Ginger-Green Chilli Paste
1 tbsp Fenugreek Leaves (Methi)
1 tbsp Oil
to taste Salt
as needed Water
Rice Flour
Oil: For frying
For the Chaat Toppings:
1 cup Potato (boiled, and peeled)
1 cup Onion (finely chopped)
1 tbsp Curd
to taste Sweet Chutney
to taste Green Chutney
to taste Chaat Masala
to taste Black Salt
to taste Cumin Powder
to taste Red Chilli Powder
for garnish Sev
For garnishing Fresh Coriander
Step 1— Prepare the Dough

In a mixing bowl, combine sorghum (jowar) flour, rice flour, and gram flour.

Add ginger & chili paste, kasuri methi (fenugreek leaves), oil, and salt to taste.

Gradually add water to knead into a dough, ensuring not to let it rest for more than 5 minutes.
Step 2— Shape the Papdis

Take a small portion of the dough and dust it with rice flour (do not use other flours for dusting).

Roll the dough into a thin circle (approximately 1 mm thick) and use a cookie cutter or the edge of a bowl to cut out uniform shapes.

Prick each papdi with a fork or knife to prevent puffing during frying.
Step 3— Fry the Papdis

Heat oil in a pan and fry the papdis on a medium flame until they turn golden brown.

Alternatively, for a healthier option, you can bake them in a preheated oven at 160 degrees for 12 to 13 minutes.
Step 4— Assemble the Chaat

Break a few papdis onto a plate and top them with boiled, chopped potatoes, onions, and soaked/boiled moong.

Drizzle with churned curd, sweet chutney, and spicy green chutney.

Sprinkle with chaat masala, black salt, cumin seed powder, and red chili powder for flavor.
