This classic snack features perfectly spiced mashed potato vadas, coated in a crispy gram flour batter and deep-fried to golden perfection. Served inside soft pav bread, layered with tangy coriander-mint chutney and spicy garlic chutney, it is a flavorful explosion in every bite. For the Potato Filling:
5 piece Potato (boiled, peeled & cubes)
1 tbsp Oil
1 tsp Mustard Seeds
pinch Asafoetida Powder (Hing)
11 piece Curry Leaves
1 inch Ginger
5 piece Green Chilli
9 piece Green Garlic Cloves
1 tsp Turmeric Powder
to taste Salt
as needed Coriander Leaves (chopped)
For the Batter:
1 cups Gram Flour (besan)
1 tbsp Cornflour (Cornstarch)
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Asafoetida Powder (Hing)
1 tsp Baking Soda
to taste Salt
as needed Water
Step 1— Prepare the Potato Filling

Heat oil in a pan and add mustard seeds. Once they crackle, stir in the asafoetida and curry leaves.

Add the ginger, green chili, and garlic paste, and sauté for about a minute.

Stir in the mashed potatoes, turmeric powder, salt, and chopped coriander leaves. Mix thoroughly to combine.

Remove the mixture from the heat, transfer it to a bowl, and allow it to cool completely.

Once cooled, shape the potato mixture into small, even-sized balls (about 1.5 inches each).
Step 2— Make the Batter

In a mixing bowl, combine gram flour, cornflour, turmeric powder, red chili powder, asafoetida, and salt.

Gradually whisk in water until you reach a smooth, pouring consistency.
Step 3— Fry the Vadas

Just before frying, add the baking soda to the batter. Pour a small amount of hot oil over the soda to activate it, then stir everything together.

Heat a deep-frying pan with oil on medium flame.

Dip each potato ball into the batter to coat it evenly. Use a fork to lift the coated ball and gently drop it into the hot oil.

Fry until the vadas are golden brown and crispy, then remove and set aside.
Step 4— Assembly

Take a fresh pav and slice it open.

Spread coriander-mint chutney on both inner sides and add a smear of spicy garlic chutney.

Place the fried vada in the center, close the pav, and serve immediately with additional chutney and fried green chilies.
