Puff pastry sheets: As needed
Eggs: Boiled (halved for filling)
2 tbsp Oil
6 cloves Garlic (finely chopped)
3 piece Green Chilli (finely chopped)
5 large Onion (roughly chopped)
1 tsp Turmeric Powder
2 tsp Kashmiri Red Chilli Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Pepper Powder
1 tsp Salt
1 cup Water
A few Coriander Leaves (chopped)
Butter or ghee: A little for brushing
Sesame seeds: For garnish (optional)
Step 1— Prepare the Onion Masala
1
Heat oil in a pan over medium heat.
2
Add finely chopped garlic cloves and finely chopped green chilies. Sauté until fragrant.
3
Stir in roughly chopped onions. Sauté until they become translucent.
4
Lower the heat and add the spices: turmeric powder, Kashmiri red chili powder, cumin powder, coriander powder, pepper powder, and salt.
5
Add water to the pan to soften the onions. Cover and cook on medium-low flame until the water is absorbed and the onions are soft.
6
Finish by stirring in fresh chopped coriander leaves.
Step 2— Assemble the Puffs
1
Preheat your oven.
2
Grease your baking tray with a little oil.
3
Take a frozen puff pastry sheet and place a spoonful of the onion masala in the center.
4
Place half a boiled egg on top of the masala.
5
Fold the opposite ends of the pastry over the egg and press the edges gently to seal the puff completely.
6
Brush the top of each puff with melted butter or ghee and sprinkle with a mix of black and white sesame seeds.
Step 3— Bake
1
Place the assembled puffs on the baking tray, ensuring there is enough space between them for expansion.
2
Bake until they are golden and flaky. Serve hot!
