Discover the art of making a classic Mixed Vegetable Thoran, a quintessential Kerala-style stir-fry. This healthy, dry dish features a vibrant medley of finely chopped carrots, French beans, and green cabbage, perfectly complemented by a flavorful coconut and spice base. Infused with aromatic curry leaves, mustard seeds, and urad dal, this simple yet nutritious recipe is the ideal side dish to pair with steamed rice, sambar, or rasam for an authentic South Indian meal.

1 cup Grated coconut
1 cup Onion (chopped)
1 medium Dry Red Chilli
1 medium Green Chilli
1 tsp Peppercorns
1 tsp Cumin Seeds
1 springs Curry Leaves
1 cup Carrot (chopped)
1 cup French Beans (chopped)
1 cup Cabbage (chopped)
1 tbsp Oil
1 tsp Black Gram (Urad Dal)
1 tsp Mustard Seeds
as needed Salt
as needed Water
1 tsp Turmeric Powder
1
In a mixer jar, combine the freshly grated coconut, chopped onions, dried red chilli, green chilli, peppercorns, cumin seeds, and a sprig of curry leaves.
2
Grind these ingredients together without adding water to achieve a dry, coarse consistency.
3
Set this spice mixture aside.
4
Snip the ends of the French beans and remove any strings. Chop them into fine pieces.
5
Finely chop the carrots and the green cabbage.
6
Ensure all vegetables are thoroughly washed before chopping.
7
In a large bowl, combine the chopped vegetables with the prepared coconut-spice mix and toss well to combine.
8
Heat oil in a wok or kadai over a medium flame.
9
Add the black gram split (urad dal) to the oil while it is still heating. Stir continuously until the dal turns golden brown.
10
Add the chopped onions, fresh curry leaves, and green chillies (snipped roughly). Stir well.
11
Sauté until the onions turn translucent but still retain a slight crunch.
12
Add the vegetable and coconut mixture into the wok.
13
Season with salt and turmeric powder. Mix everything thoroughly.
14
Add a small splash of water (optional).
15
Cover the pan and cook on a medium flame for 10 to 12 minutes.
16
Once cooked, give it a quick mix and serve hot, ideally as a side dish for rice
